This to me is the classic “treat yourself” meal to have with company. We bought some delicious steaks at Eastern Market and experimented with a bunch of Penzey’s seasonings: Bicentennial rub, Chicago seasoning, and Old English rub. I’ve only made this recipe once – for a Christmas dinner party when I was living on Long Island. Why hasn’t the recipe been brought out again? Because apparently 3 lbs beef tenderloin costs you $63, at least in Westhampton. Adapted from an Emeril recipe.

John made this once for me and some friends and I thought it was just delicious. It’s a good entertaining dish because it’s not too difficult, but is homey and will please picky eaters. PS: Serve with garlic bread, egg noodles and broccoli.

Becky fashioned this dish off of something they served at the fancy restaurant where she used to work. I served it this year for Thanksgiving and it went over really well. A nice “fancy”side dish for a dinner party.
