Spanish tortilla

This is a Jaleo recipe that I’ve made a bunch of times. As a note – I’ve regularly been using Bermuda onions rather than Spanish ones. The problem is that eventually that means the omelet kinda turn green! But I like the taste better. Your call.

That post title sounds dirty for some reason. Probably because I’m twelve.
