Roasted Leg of Lamb

For Easter dinner, I roasted a leg of lamb and served it with a red wine sauce. What I ended up doing was mostly a combo of two Emeril recipes. It turned out well, though more “medium” than “medium rare”.

Alton Brown’s Turkey

As a note, this is a fairly labor-intensive recipe, so it’s not for the high-stress cook come Thanksgiving. I may prefer my method this year, an herb butter method I’ll detail later on.

Chorizo stuffing

For when you want something a little different for Thanksgiving. This was Andrej’s contribution to pre-Thanksgiving years ago.
You need cornbread for this, so I just make a pan of it from the package. If you have a good homemade recipe, feel free to use it.
