Risotto is one of my favorite things to make. A) I love the taste B) It’s pretty easy once you figure out the basic recipe. C) It’s also really easy to adapt to your taste.

I based this off the recipe that’s on the DVD of “Bend It Like Beckham” but ended up cooking it a LOT longer and adding a lot more seasoning. And I still could have dealt with a spicier dish. I’ll try to make it hotter next time.

This is what John cooked me this year for Valentine’s Day, and it’s a meal that should be reprised by others. The combo is crab cakes and braised short ribs; he served with mashed potatoes, string beans and garlic bread.
