This recipe is inspired by what was my favorite brunch dish at Tallula, an Arlington restaurant I enjoy. When they took it off the menu, I took matters into my own hands. The ribs could be done in the crock pot.

Most cooks know how to make pesto. I have to say, it’s one of the few things I regularly use my food processor for. But it’s a great way to use up extra basil, which I always seem to have on hand.

Becky and I made this recipe once when we were having a Spanish feast together, based on a Washington Post recipe. I think this would have benefitted from the use of my deep fryer, as we could have better controlled the temp of the oil.

I’m going to guess that you guys end up with a deep fryer as another wedding gift. If not, you can do this in an inch or so of oil in a cast iron skillet, or arguably a regular one.
